Cleaning Out Fridge Recipe

Fridge Recipe 1I enjoy the days when I have a full day off and get to catch up on my household chores.  I really enjoy cleaning out the fridge and making unusual combinations of foods by adapting a recipe!   It works out and it becomes a complete adventure.

I had some left over steak and fresh veggies that needed to be used up and there were some  flour tortillas.   I have seen several recipes before that molds the tortilla into a muffin tin.  So I used a large muffin tin and made 6 portions.   This was very filling and had to make sure the tortillas didn’t rip, one did and it didn’t set up solid in the muffin tin. (but it was still yummy)

Out of the fridge:  Leftover Steak cooked about 1-1/2 cups diced, 1 Red Pepper chopped finely, 1/2 Purple Onion chopped finely, Mild Salsa about 3/4 cup, 1 Jalapeno chopped finely, can of Black Beans, 1/2 cup sour cream, cheddar cheese, 1 tsp. cumin, and 6 flour tortillas.   Stirred it all together in a large bowl.   Then curled the flour tortillas into the large muffin tins.

Substitute chicken for beef and add any veggies that sound good with your mixture of leftovers!  I enjoy adding basil, thyme and cilantro depending on the flavor profile you are searching for figure out the best combo for your  recipe.

I prefer a bit of a kick and unfortunately my salsa and jalapeno were both mild, so adjust accordingly.
